CHOKKA SAUCE

A smoky Trinidadian side dish/sauce

4 tbsp Olive Oil

1 Red Onion, cut in 1/2

5 Garlic Cloves

500g Cherry Vine Tomatoes

Chilli Flakes

1 tbsp Thyme

1tbsp Smoked Paprika

 

Blacken the tomatoes (still on the vine), chillis, garlic & onion under the grill, with a little drizzle of the olive oil & seasoning.

Remove the vines, & any very, very black skins.

​

Roughly blend the grilled veg with the spices & remaining oil. Taste & season with salt & pepper.

​

This will store in the fridge for a couple of weeks, or can be frozen.

​

It can be eaten with veggie fritters, grilled chicken & fish, on toast, or as a salad
